Potbelli BBQ, a popular barbecue catering company in San Antonio, is officially opening its East Side location for limited dine-in service. Located at 3363 E. Commerce St., Suite 104—right next to the Frost Bank Center—the new outpost will open its doors on Monday, July 22. Guests can dine in on Mondays and Tuesdays from 11 a.m. to 7 p.m., or until the food sells out.
This marks the first time the catering-based business will offer an in-person dining experience, giving barbecue fans a new way to enjoy smoked meats and Southern flavors without booking an event or delivery.
The menu features a variety of wood-smoked meats including brisket, pork ribs, pulled pork, and sausage links. Potbelli BBQ is also offering hearty sandwiches packed with their signature smoked meats.
Alongside the main dishes, customers can enjoy rotating side options like creamy mac and cheese, tangy potato salad, candied pork and beans, and green beans cooked with bacon. The rotating side menu keeps things fresh and encourages repeat visits from regulars looking for new flavors.
The restaurant’s commitment to quality ingredients and authentic preparation has already earned them a loyal following through catering. Now, they’re inviting everyone to enjoy their food in a laid-back, dine-in atmosphere.
Potbelli BBQ originally started as a catering company focused on delivering traditional Texas barbecue for events and gatherings. Over the years, they’ve grown to offer delivery across the San Antonio area and even nationwide shipping to 48 U.S. states.
The new dine-in option represents a strategic shift. Instead of transitioning to a full-time restaurant, Potbelli will only open for dine-in on Mondays and Tuesdays, preserving their availability for catering business during the rest of the week.
This allows the brand to stay true to its roots while giving customers a more flexible way to enjoy their food.
Choosing a location next to the Frost Bank Center—a major venue for concerts, sports games, and public events—gives Potbelli a strong advantage. While most foot traffic peaks during weekends and special events, Potbelli’s weekday opening schedule offers a relaxed and crowd-free dining experience.
This thoughtful planning also gives local residents and workers a new lunch or early dinner option at the beginning of the week, when restaurant choices are often more limited.
Opening a dine-in location brings new jobs to the East Side and boosts visibility for Potbelli BBQ. In-person dining experiences help the brand connect with customers, build loyalty, and generate buzz across the community.
From an economic standpoint, Potbelli’s move adds vibrancy to the neighborhood and supports nearby businesses by increasing weekday foot traffic.
The launch also reflects a growing trend in the food industry—caterers and delivery-only kitchens opening brick-and-mortar spaces to meet customer demand and expand their reach.
The grand opening is scheduled for Monday, July 22 at 11 a.m. Early customers may be treated to limited-time offers or sample items as part of opening day celebrations.
Due to limited seating, customers are encouraged to arrive early. Once the food sells out, doors will close for the day. Potbelli BBQ expects strong turnout based on their existing fanbase, so early birds will likely get the best selection.
Unlike food trucks or permanent BBQ joints that operate daily, Potbelli is striking a balance between dine-in and catering. This allows them to maintain high food quality, avoid overextension, and stay loyal to customers who rely on their catering services.
By staying open just two days a week, they also keep overhead low while creating demand and exclusivity—a tactic that has worked well for other food businesses around the country.
If this dine-in experiment succeeds, Potbelli may consider expanding its schedule, increasing menu variety, or adding seating to accommodate more guests. Future collaborations with the Frost Bank Center could include event-night specials or pre-game meal promotions.
The company has also hinted at launching exclusive “dine-in only” dishes that aren’t available via catering or delivery. These offerings could further differentiate the in-house experience and bring guests back week after week.
Potbelli BBQ’s new dine-in location on San Antonio’s East Side opens July 22, offering weekday barbecue lovers a place to enjoy premium smoked meats, rotating sides, and a casual environment. Open only Mondays and Tuesdays, the restaurant is located next to the Frost Bank Center and is designed to serve both local diners and event-goers. With this launch, Potbelli BBQ expands beyond catering and delivery into a unique hybrid model of barbecue service.
